Amarcord Restaurant is proud to offer a great selection of dishes which
represent the Italian region of Emilia Romagna.
The most popular and worldwide appreciated cuisine from Italy has it's origins
in the Northern Region of Emilia - Romagna. It's capital city of Bologna is
known in Vancouver for Tortellini, Lasagna, the meat sauce Bolognese and the
Mortadella.
On theEast side near the Adriatic Sea is Ferrara with the delicious Tortelloni
stuffed with squash and nutmeg, as well as a variety of traditional seafood
dishes. On the West side lies Modena City - famous for its Balsamic Vinegar
which has been a great improvement in the making of vinaigrette sauces and also
sauces for veal dishes. Continuing westside Reggio Emilia and Parma are known
for the Parmigiano Reggiano, the Parmesan cheese and the Prosciutto ham which
are exported worldwide.
The Sangiovese and the Lambrusco are the best known red wines of the region with
the best known white wines being the Trebbiano and Albana.
